Rose hips are the berry-like fruits of the rose bush left behind after the bloom has died. Although nearly all rose bushes produce rose hips, the tastiest for eating purposes come from the Rugusa Rose. Rose hips have a tangy, fruity flavor similar to that of cranberries. The fruits are best harvested after the first frost, which makes them turn bright red and slightly soft.
There are many culinary uses for rose hips. They can be used fresh, dried, or preserved. Rose hips can be used in apple sauce, soups and stews, syrups, puddings, marmalade, tarts, breads, and pie, or made into a jam or jelly. Each hip comprises an outer fleshy layer which contains seeds embedded in a matrix of fine hairs. The irritating hairs should be removed before using the rose hips in a recipe.
I also just finished a joyful art work called Red Hat Society, which seemed fitting for Ruby Tuesday. Red Hat Society is a sisterhood of women 50 years and older. Their charter is to enjoy life to the fullest, no matter where they are or what they are doing! Interested in this art work? You will find more information herein Quiltworks' gallery.

That's an interesting post and great shot. I have heard that rose hips can be used but have never tried it. I have some that are still on my rose bushes so maybe I'll try using them.
Thanks for the information, we have tons of them on our beach roses of our garden on Cape Cod. But we never know that they are edible.
Thank you for showing me the rose hips. I need to find out what they are in my language because what you tell us is really interesting. Thank you
